The Wine

It's made using only indigenous yeasts and sees a maceration with the skins that is followed by the old technique of “steccatura,” in which oak staves are manually inserted in the wooden vats to keep the skins submerged for a period of months after fermentation has finished. The wine is aged in a combination of large oak vats and smaller barrels, but with a clear focus on diminishing the influence of new oak. It is bottled unfiltered. The resulting wine offers a complex array of aromas, showcasing the typicity of the La Morra commune.
